What was the inspiration behind your Pineapple Teriyaki Salmon recipe? Is there a special meaning or story behind it?

I was looking for new ways to use the multilevel cooking of the Thermomix® that saves so much time, and when the pineapple challenge came I knew I had a great recipe to try. I’ve been cooking a very similar recipe but with pineapple juice for more than 10 years, but I have never been a fan of using store-bought juice, so I decided to try it with fresh pineapple. The Thermomix® is so potent that it will juice the pineapple to perfection. Then I added fresh ginger for a little kick and a splash of rice wine to balance out flavors.

Pineapple freezes really well, so buy two pineapples on your next supermarket trip, peel and cut one in chunks, and freeze it so you can make this recipe anytime. Also, try to use a ripe pineapple as it will have more sugar that will give a delicious sweetness to the sauce. I like to buy the salmon the same day I am cooking it, as it will have the best flavor.

What is your creative process when creating a recipe? Where do you draw inspiration from?

I used to have my own cooking show in Mexico City a few years ago, and I found the most successful recipes are the ones with a great punch of flavor that have just a few and simple steps, with ingredients that are easy to find at any supermarket. For this recipe, I looked into traditional ingredients for the teriyaki sauce and then adjusted quantities to incorporate pineapple and ginger. Then test out the amount of liquid needed to steam the salmon while concentrating the sauce.

What is your favorite thing about being a Thermomix® Independent Consultant?

I love to share my love for good food with everyone, and being an Independent Thermomix® Consultant lets me do just that, with people that love to cook, and also, with those that don’t know-how.

On what occasions do you recommend users prepare this recipe?

I love to serve this when entertaining guests, especially if we’re going to eat outdoors. Imagine a summer soiree, with a nice cold fruity cocktail on hand, and then this dinner that guests will love. Just serve it with some Jasmine rice on the side and that’s it.

What was the inspiration behind your Pineapple Infused Gin and Tonic recipe? Is there a special meaning or story behind it?

I wanted to create something uniquely summer and have always wanted to experiment with cocktail infusions but didn’t know where to start. The Thermomix® Consultant Pineapple Challenge inspired me to experiment and the sous vide function on my TM6® made it possible. I have always loved fresh herbs, so I decided to combine pineapple and some of my favorite aromatics including rosemary, sage, and ginger into 3 different Pineapple Gin Infusions.

Share your special tip + trick for your Pineapple Passion recipe.

Definitely keep the pineapple pieces from the infusions if you are going to drink in a couple of days and add to your G&T, it’s strong but adds an extra dimension to your drink, also serve a fresh piece of the herb you used whether it be rosemary, sage or ginger when serving. It not only looks pretty, but it also smells good too, every time you take a sip. Don’t like gin? Swap it with different alcohol like Vodka when doing your infusion.

What is your favorite thing about being a Thermomix® Independent Consultant?

There are many reasons why I love being a Thermomix® Independent Consultant. I love being able to help families and individuals cook more at home and eat healthier. There are so many additives and unknowns in processed foods these days and I love being able to show people how easy it is to cook with fresh ingredients using the Thermomix®, no matter what type of cook you are. I have also met some amazing people, both consultants, and customers, and I love seeing and hearing how owning a Thermomix® has changed customers’ lives. The messages I get from customers within days of their TM6® arriving are inspiring and bring a smile to my face every time…

On what occasions do you recommend users prepare this recipe?

Whether you are having friends over for dinner, or just want a refreshing drink by the pool, this is the perfect summer drink. It’s not overpowering, but elevates a normal G&T and adds a flavor element that will have you coming back for seconds. Remember though to drink responsibly!.

Have you brought your Thermomix® with you on any of your travels? If so, where?

Being based in St Louis, we regularly visit Table Rock Lake, and this year, we have started taking my TM6® with us. It’s easy to take on road trips, just put into transportation mode, and you are set and I can’t wait for my travel bag to arrive which will make it even easier. How many times have you arrived at your destination and even though your accommodation advertised ‘fully equipped kitchen’ it’s not! Take your TM6® with you and you’ll be whipping up smoothies, pancakes, oatmeal, or a breakfast bowl in no time, and dinner time is a breeze. While we do enjoy eating out occasionally, I love being able to save money and eat healthier while on vacation and when we have a great view to enjoy, nothing beats breakfast or dinner on the balcony and my TM6® allows us easily to do just that.

What was the inspiration behind your Pineapple Upside Down Cake recipe? Is there a special meaning or story behind it?

The inspiration for this recipe comes from my husband. He always talked about his grandma’s moist pineapple upside-down cake. He told me she would make the cake every time they would visit so I decided to give it a try and attempt to make the cake that brings him a lot of great memories. After a few attempts, I got the best and golden pineapple upside-down cake. And when I realized Thermomix® was looking for pineapple-inspired recipes, I just knew I had to do it.

My special tip is to add a little bit of cardamom for a little twist.

What is your creative process when creating a recipe? Where do you draw inspiration from?

My creative process stems from the easy step-by-step structure of Cookidoo and my home of Portugal. I love how Cookidoo is flexible and allows me to bring a Portuguese flare to my dishes – it feels like home.

What is your favorite thing about being a Thermomix® Independent Consultant?

Being an Independent Consultant is all about the love. I love to share how much I enjoy my TM6® and I love making memories by making family-favorite dishes.

On what occasions do you recommend users prepare this recipe?

Any day is a good day to make family memories. That is how this delicious cake was created!

What was the inspiration behind your Spicy Pineapple Vinaigrette recipe? Is there a special meaning or story behind it?

I am always looking for ways to eat healthily, a salad dressing came to my mind as I frequently eat salads, and it sometimes gets boring. I found this recipe in an old cookbook® and modified it with a new twist.

Don’t be afraid to use the cayenne pepper! It is the combination of sweet & spicy that makes it delicious! I love this vinaigrette with arugula or spinach, avocado, feta cheese, you can sprinkle also some nuts! Whatever you have at home!

What is your favorite thing about being a Thermomix® Independent Consultant?

I love being a consultant because I can share my passion for cooking and baking. I am always looking for healthy food ideas and I know I am not alone! So sharing what I’ve learned really inspires me to keep going!

What was the inspiration behind your Tropical Mimosa recipe? Is there a special meaning or story behind it?

During the pandemic, I did some Facebook Live Happy Hours for a laugh & to keep me sane. I had such great support for those Lives, I wanted to create my own cocktail as a thank you to everyone who tuned in to my funny little happy hours. It sure made the lockdown times a lot more bearable.

What is your creative process when creating a recipe? Where do you draw inspiration from?

I love experimenting with my Thermomix® & want to encourage others to do the same. It inspires me to see my friends & customers using & enjoying their Thermomix® to its best potential.

What is your favorite thing about being a Thermomix® Independent Consultant?

My favorite part of being a Thermomix® Independent Consultant is the reaction on my customer’s faces when they realize “Wow!! Thermomix® can do that too!!!’

Have you brought your Thermomix® with you on any of your travels? If so, where?

I never want to leave my Thermomix® behind but if I can’t travel with her, I make sure I’m going to visit friends who have a Thermomix®. I have even taken my Thermomix® on a staycation 10 minutes from home!!

What was the inspiration behind your Piña Colada Layer Cake recipe? Is there a special meaning or story behind it?

Baking has always been a passion of mine and a way to relax. Seeing the transformation of the ingredients and knowing how happy would make others is really fulfilling. When I saw the challenge for the recipe collection I was looking for ideas for my birthday cake and everything just came together.

What is your favorite thing about being a Thermomix® Independent Consultant?

Everything! No, seriously! From the amazing friendships built to the fantastic support from everyone to help you succeed; not forgetting the joy when my customers send me their first creations, when they become adventurous to try different things, their faces during the cooking experiences, the random text asking for help about something and knowing they’ll always have support…the lives changed!! And obviously the goodies we get as consultants! Amazing and achievable incentives that just sweeten the deal even more!

 

On what occasions do you recommend users prepare this recipe?

This is a perfect summer cake and its simplicity makes it great for any occasion. From a get-together to a wedding cake…just change up the way you decorate it and it’ll be perfect!

What was the inspiration behind your Pineapple Cinnamon Drink recipe? Is there a special meaning or story behind it?

We as a family enjoy eating pineapple very much. Pineapple water has always being a must growing up. Before Thermomix® it was very easy to forget you had something going on the pot, requiring a lot of attention to not burn the pineapple skins on the pan as the water was evaporating. With Thermomix® it is very easy to enjoy this drink as I don’t have to worry about burning the skins. It is also a way to enjoy pineapple to its max.

What is your creative process when creating a recipe? Where do you draw inspiration from?

Experimenting! I open the fridge and think about what I have, and what can be combined. I’ve always had a passion for cooking and living in different countries has taught me different cuisines, methods, and ingredients. I’m also a culinary arts management graduate which has taught me to challenge myself with any ingredient at home. I love to adapt to Thermomix® wording my everyday personal recipes, and love having access to worldwide recipes on Cookidoo®.

On what occasions do you recommend users prepare this recipe?

Any time! I always have it on my fridge.

What is your go-to recipe for the Summer?

I cannot pinpoint one, but this time of the year like sautéing shrimp, guacamole, pesto, apple crumble… fresh basic recipes that can be combined or eaten on their own.

Have you brought your Thermomix® with you on any of your travels? If so, where?

Yes! Every time I travel by car and not staying at a hotel the Thermomix® comes with me!

What was the inspiration behind your Pineapple Cheese Braid recipe? Is there a special meaning or story behind it?

I grew up in a German-American household and the tradition of “Kaffee und Kuchen”, or coffee and cake with my German relatives was always a fun and special time. My mom and dad continued the daily afternoon tradition and mom still has her Kaffee und Kuchen every day at 1 PM. My favorite type of cake was a pastry filled with cheese and some fruit, similar to a Danish pastry. So when Thermomix® had the pineapple challenge, that was my first thought… to try to re-create a pastry filled with cream cheese and mascarpone and pineapple that would be fresh and delicious any time of year, but especially summertime.

What is your creative process when creating a recipe? Where do you draw inspiration from?

I had recently learned how to braid bread into different shapes watching videos on YouTube, and this type of braid was really fun and different. To develop the recipe, I tried 3 different bread recipes in Cookidoo® to get close to what I wanted. After playing around with the ratios of milk to the flour and the amount of sugar, yeast, and eggs, I finally had the perfect dough that stayed soft for a few days and had a delicious, slightly sweet taste.

What is your go-to recipe for the Summer?

My summer go-to recipes are the marinades, dressings, and chimichurri recipes. We love to barbecue, so these are perfect for making the meat, chicken or fish taste great! I salads in the summer — the Quinoa Salad with Strawberry Vinaigrette, Texas Coleslaw, Broccoli Salad and the Southwest Quinoa Salad are all on repeat in our house… they’re also really great for when you’re cooking for guests.

Have you brought your Thermomix® with you on any of your travels? If so, where?

I bring my Thermomix® whenever we stay at an Airbnb for a length of time. The last time was in Truckee, California, near Lake Tahoe. We made several meals, breakfasts, dips, sauces, and smoothies, which always taste good and keep us eating healthier and more economically than eating every meal out.

What was the inspiration behind your Piña Colada Dessert recipe? Is there a special meaning or story behind it?

The inspiration for this recipe was from one of my favorite summer drinks, the Piña Colada. I love the classic combination of pineapple, coconut, cream, and rum 🙂 I thought that it would be really yummy if I made it into a dessert. The inspiration for the layers came from the recipe my family absolutely loves and makes all the time, Cheesecake in jars. I like that the Piña Colada Dessert has a little bit of a crunch from the base, a delicate cream filling, and sweet pineapple on the top. Which all together gives you a Hawaiian party in your mouth. 🙂

What is your favorite thing about being a Thermomix® Independent Consultant?

My absolute favorite thing about being a consultant is my happy customers. I love receiving messages and pictures of delicious dishes they made.

On what occasions do you recommend users prepare this recipe?

Definitely, you can make the recipe for any occasion from a simple get-together with your friends, to birthday party’s or showers. The layered look in the glass jars is classy and a perfect portion.

What is your go-to recipe for the Summer?

I like all kinds of seafood. Some recipes I make very often are Salmon with Lemon Hollandaise, Shrimp Tacos with Denver Salsa, and Mussels in Spicy Tomato Sauce. I’m really excited to try the new salmon recipe from the Pineapple Passion Collection 🙂
